Lipoxygenase enzymes are widely distributed in both the plants and animals. These enzymes catalyze the oxidation of polyunsaturated fatty acids containing bond system (1Z, 4Z) pentadiene. The article discusses the structure and function of plant lipoxygenases. Also described are properties of biochemical and molecular reactions, including lipoxygenases which overlap with the enzyme in plant cells. Includes major and minor pathways of fatty acid hydroperoxides.
